If life is about taking risks; I had life for lunch.

Onions? Are they sweet? I’ll find out. Have any clue what I was doing? Nope. Make it again? Maybe…  Wasn’t too bad. Chicken, Apple, Sweet Potato, Onion and Spring Lettuce with Newman’s Balsamic Vinaigrette…

Note: Cutting and cooking in general are tremendously difficult after injuring your arm. Maybe I had sympathy pains from the 7 shot-blocks I had earlier. 7? Yup.

Night Before Halloween…

We all got together, to ruckus, to cookus and have fantastic time. My tandoori chicken made its entrance as the first dish cooked for a dinner party. Changed up the recipe a bit by using Honey Greek Yogurt, bigger chunks of mint, and a leaner skinless boneless chicken breast. The purpose of all this was to brainstorm an art event that commingles visual and culinary arts, with paired music either inspired by the art or food. Or if the inspiration for the art/food comes from the music, thats fine too. There’s no set procedure. We’re improvising too. Again, this is still developmental. If it happens, great, if not…  then it was just a good idea, and reason enough to get together to have food and good times.

George Foreman was in the Garage.

I never noticed the white plastic clamshell covered in dirt, and rust dust in my dad’s garage.  Pops is the consummate repairman. From hairdryer to Rolls Royce, there’s not much he can’t fix or improve upon. So he hoards it up and if its in the garage, it most likely needs work. When I saw the grill, naturally, the assumption was that George Foreman was just a heavy weight.  But, my dad said it still worked.  It was still a contender.

Spice it up…

Chicken Spaghetti

Tonight was the culmination of many ingredients. The macro lens arrived, and pasta was tossed in slow motion. Many weeks of planning for this moment. Slow motion equals spice.  Cajun spice on steamed chicken breast, the same store purchase from last night. There were no lessons learned here other than just how much calorie-free taste you can add with the right spice! Chicken breast, veggies, and a sweet potato. With an apple and a yogurt a bit later for dessert.

It was a good day.

Asian Chicken Salad with Bok Choy and Snap Peas

Asian Chicken Salad

Lessons learned:

  1. Ginger is potent. Taste your additives if you’re unsure.
  2. Seeds of the Jalapeno are like one of my ex girlfriends. Small, hot and too much to handle.
  3. Learned how to poach chicken, while half cooking it in the microwave.
  4. Cutting bored. Need new knife. Will work with new one next time.
  5. Took 30 minutes longer than I thought, like usual.
  6. Probably ate 2x fiber and 1/2 the portion of chicken. Too small of a skillet.

Day Three of cooking, learned a few things regarding the cooking of chicken and preparing mixings. So i walk away from this knowing that there are several things that need to be evaluated before diving in.

  1. See the final dish. Note the proportions.
  2. Just a green and white dish could be boring. What’s the color doing?
  3. Thaw the chicken in advance, homeslice.
  4. Finally, and most important. Only cook the dishes that have good directions. This recipe was just poor.

Tandoor Chicken with Sweet Potato

Bombay Authentics Vindaloo

Had some left over chicken quarters, let the chicken marinate in the sauce overnight, fired up the oven, and after basketball fixed up a nice lunch. I did add two tablespoons worth of Vindaloo sauce, to add more spice and flavor to the mix. Bombay Authentics, was not the sauce of choice on the recipe. So, maybe Patak’s it is next time. This was easy to make, delicious to eat, and filled up the gullet with low carbs and calories.

Today was the first day i’ve ever cooked. I attempted tandoori chicken recipe off of Epicurious. Attempted, and succeeded.
This low carb, easy to make dish was pretty tasty. What I appreciated more than anything else was just how lean the chicken was after removing the skin. I easily removed 3 pounds of fat in addition to the skin. Felt just like a plastic surgeon operating on a liposuction patient. Dragging the serrated knife over the muscle to remove the fat globules and rip the slippery skin away from the meat. These were the disgusting additives that I usually would ingest. Everyone on any type of weight loss program should be taught to skin a quarter chicken.
I think the vindalu sauce was not as good as it could have been May have been too little used, or a bland brand.
